The Ibrik Coffee Maker

The Ibrik is a traditional Middle Eastern brewer. It is essentially a long-handled pitcher with a narrow neck.
How To Use
This brewing method takes a little more time and attention but isn’t necessarily difficult. Fill the pot to just below the neck. Add the very finest grind coffee (finer than even espresso setting, think dust or powder). Set on medium-low heat. Add any sugar or flavorings (such as cardamom). After a few minutes the coffee will begin to froth, remove it from the heat just before it reaches the top. After the foam receeds, set the pot back on the burner with the heat on low. Allow it to froth up and settle down two more times. Serve in demitasse (espresso sized) cups. The sludge in the cup is part of the experience, so you’ll want to avoid the last sip.

Time consuming, requiring constant observation and leaves sediment in coffee.
